Back to the days where all goods and services were bartered is where I’d like to live. Or in an Amish community. I hear those crazy mofos still know what is the haps in this crazy world in which we live. Where’s my buggy?!

I recently began training with Vin at ProFitness (@profitnessaz on Twitter. Go. Follow. Return.) in exchange for some conversation starting and website sprucing. You know, that thing I do to finance my coffee addiction plan big fancy trips pay a bill or two. Right now I head in once a week (originally set for twice, but I’m a completely out of shape wuss.) for an intense start to my mornings.

The most appealing thing about working with Vin is the low-pressure, confidence-building approach that he and the rest of the facilities trainers take to training their clients. No one is yelling in my face and making me cry. The crying comes from the side-splitting laughter during the core exercises…I’ll chalk that up as “cross-training”. I’ve only almost thrown up twice since I’ve started. Once was because, breakfast really is the most important meal of the day and the other was during a transition onto new meds. We’ll talk about my dark, scary place later. Mmkay?

So far I’ve seen a great rise in my daily energy and that’s after taking two weeks off. ::hangs head::

Next training session is on Tuesday morning, bright and early, at a whopping 7:30am. Who’s down to take Vin for a test drive?

#WeeknightMeals: Chicken Enchilada Skillet in Under 30 Minutes

I recently joined a campaign with Collective Bias to help promote www.giveeverynightnewflavor.com, a site intended to, well, give every weeknight meal new flavor. We all get bored with the menu choices and the appetite becomes stale. Especially when there are seven hundred badrillion thousand and twelve things going on during the week.

Around here, I have Girl’s Night every Wednesday night that has me heading out the door as Husfriend is walking in from work. Now, this isn’t the most ideal transition from honey I’m home to honey I’ll see you tomorrow, but it’s sort of how we operate on Wednesdays and that’s okay with us. Sometimes, however, come Wednesday, I’m aching for some dinnertime chat. If I could make a meal that’s tasty, meaningful, and cooked to perfection in under 30 minutes, consider me sold. This campaign brought to my attention a resource that I’m sort of bananas over. A database of recipes that cater to your weeknight meal needs. How many servings? How long do you want to be in the kitchen? What culture’s fare are you hankering?

For this participation opportunity, I was asked to select a meal that takes under 30 minutes to prepare. From prep to presentation, this meal took me 22 minutes. Aw. Yeah. Plus I love me anything that is Mexican cuisine and/or smothered in spicy red sauces. ::drool::

Ingredients

  • PAM® Original No-Stick Cooking Spray
  • 12 corn tortillas, torn into bite-size pieces
  • 3 cups shredded cooked chicken (3 cups = about 12 oz)
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 can (10 oz each) Rosarita® Enchilada Sauce
  • 1 can (8 oz each) Hunt's® Tomato Sauce-No Salt Added
  • 1 cup shredded Cheddar and Monterey Jack blend cheese, divided

Directions

  1. Spray large nonstick skillet with cooking spray. Add tortilla pieces and chicken; mix well. Cook over medium-high heat 5 minutes or until hot, stirring frequently.
  2. Combine undrained tomatoes, enchilada sauce and tomato sauce in medium bowl; pour over chicken mixture in skillet. Mix well. Sprinkle 1/2 cup cheese over chicken mixture. Cover skillet; cook 5 minutes or until hot, stirring occasionally. Sprinkle with remaining 1/2 cup cheese. Serve immediately.

How fabulously simple and mighty delicious might I add?! I am tempted to make this dish for lunch some days in the coming weeks. ::drool:: (again)

This one time, I took Oprah’s advice.

This is the post where I reveal two things: 1) I am not an Oprah fan. I don’t disagree with any of her philanthropic work, I just don’t idolize her like most. 2) I took her advice.

Remember close to about a decade (or two) ago when Oprah said that you don’t have to wait on a man to buy you a diamond? If you want a diamond, go get your diamond. Very materialistically empowering to the female population if I do say so myself. I, for one, have been empowered, to a degree.

I call this thing on my left ring finger an Interim Ring. Promise ring is for kids in middle school and is usually given to a girl by that boy in homeroom with the least pre-pubescent acne. Swoon. I got this CZ beauty for myself because I want to proclaim that I’m spoken for, devoted to another, untouchable, unwavering, promised & faithful. The ring and the finger in which it’s placed signifies something greater and sacred to our society. Who’s to say I have to wait until a party is thrown or a piece of paper is signed to proclaim that I’ve found the one? Why should I have to wait when I already wash his underwear and share in nurturing a family under the same roof?

The good thing is he told me to get the one I like most…a year ago. I’m just now putting it on. It appears as though I had some big girl panties I wasn’t quite ready to slip into. These things are huge but I refuse to let that intimidate me. I’ll just wear a tightly-fastened, braided belt to keep ‘em up as I grow into them fittingly. No doubt I’ll look spiffy, if I don’t already.

Now all the lesbians at Dollar Tree won’t hit on me.

The Commendable.

There's something to be said about commendable people. The ones who take criticism and slander in a stride of grace. Who opt not to engage in the petty banter and unnecessary competition of the way it sometimes goes in this overly competitive online realm.

In matters of business, I've received the split personality dealing. Pleasant and ethical one second, dramatic and disconcerting the next. Most of the time, the nasty side of a business relationship happens behind closed doors, while public forums serve place to salvage reputation for future baiting and switching in the face of adversity. Sometimes it is the blatant opposite.

From peaceful to sour in the blink of an eye. As long as no one is bitter with anyone other than themselves for the negative ways in which they've carried themselves through the season of change...

...there's something to be said about commendable people.
