Oops! Just After - Dining Room

I guess I forgot to take a picture of the empty dining room so here's the almost finished product. Since the photo I've put some decorative potpurri in the two gray vases and still need to purchase a cool pillar for my candleholder. Don't you just love my homemade chalkboard?! I do. Duh...haha! The doors you see the the right of the chalkboard wall lead into Dylan's bedroom. I still need to figure out some sort of window covering for this room, but I don't want them to be too over the top since I've already got two textiles in the room (the tablecloth and rug under the table). Any ideas??

Oh yah, and the walls were stark white before painting them "Ponytail".

Before & After - Dylan's Room

So since I'm sort of taking my time getting rooms situated in the new place (haha, not really, everything is already about 99% done) I'm going to feature each room with it's own post.

1st up. Dylan's Room

Before

After

Yes, I fully understand that I need to get some sort of organizational storage for Dylan's toys. The bazillion of them he has. Not seen in this picture is Dylan's desk converted into a changing table (so when he gets older and needs to do homework he'll have somewhere for it). It was the desk from my bedroom set growing up that I sanded and refinished to match his crib. Once his crib converts into the full size bed, he'll have a matching nightstand. :) You also can't see his ball pit, gigantic walk-in closet, and his attached bathroom. Lucky little munchkin. There's definitely still some decorating to be had in his room, but for now, I'd say it looks pretty good.

Coconut Pecan Chocolate Chunk Bars

Coconut Pecan Chocolate Chunk Bars

DOUGH
1 1/2 cups all-purpose flour
(spoon flour into a dry-measure cup and level off)
1/2 teaspoon baking powder
1/4 teaspoon salt
6 ounces (1.5 sticks/175 grams) unsalted butter, softened
1/2 cup sugar

TOPPING
1 1/4 cups light brown sugar, firmly packed
4 large eggs
2/3 cup granulated sugar
2 teaspoons vanilla extract
2 2/3 cups (7-ounce/200 gram package) sweetened shredded coconut
2 cups (about 8 ounces/225 grams) pecan pieces, coarsely chopped
12 ounces (350 grams) bittersweet or semi-sweet (not unsweetened) chocolate, cut into 1/4- to 1/2-inch (6-mm to 1-cm) pieces

PREPARATION DIRECTIONS
1. Prepare 9 x 13 x 2-inch (23 x 33 x 5-cm) pan, buttered and lined fully (bottom and sides) with buttered parchment or foil.

2. Set a rack in the lowest level of the oven and preheat to 350 degrees.

3. For the dough, stir together the flour, baking powder, and salt and set aside.

4. Beat the butter with the sugar in an electric mixer with the paddle attachment on medium speed until soft and light, 2 to 3 minutes.

5. On the lowest speed, beat in the flour mixture, scraping down the bowl and paddle with a rubber spatula and continuing to mix until the dough is smooth.

6. Remove the bowl from the mixer and scrape into the prepared pan. Press the dough down evenly, without compressing it too much, with the palm of your hand. Bake the dough until it is puffed and set and beginning to color, about 15 minutes.

7. Set the pan on a rack. Meanwhile, prepare the topping. Place the brown sugar in a large bowl and use a large rubber spatula to work in the eggs, one at a time, stirring until smooth after each. Stir in the granulated sugar and vanilla, then fold in the coconut and pecans.

8. Use a small strainer to sift away any dust formed by chopping the chocolate, and fold the chocolate chunks into the topping.

9. Scrape the topping onto the prebaked dough, using a small offset spatula to spread the topping evenly over the top.

10. Bake until the filling is set and nicely colored, 20 to 25 minutes.

11. Cool in the pan on a rack. Lift the slab of baked dough out of the ban and onto a cutting board before it has cooled completely. Cut the slab into 2-inch (5-cm) squares.

STORAGE:
Keep these at room temperature if you are serving them within a day. If not, wrap and freeze them and make sure to defrost and bring to room temperature before serving.

**Recipe credit goes to baker Nick Malgieri and his book The Modern Baker as gifted by Steve's mom to me for Christmas this year.

This was the second recipe I tried from this new toy I got for Christmas (the first was the fluffy white frosting I used on my devil's food cupcakes.) They were SO good! The batch half that was left at my house (Shannon took the other half home with her) are already gone. I brought a couple over to my Mom's and they were gone in seconds. Yay! I love when I try new things and they actually come out REALLY tasty!! They don't take long either as long as the two stores you go to actually have the chocolate you're looking for. Ha! We actually used the semi-sweet baker's chocolate since a lady cleaned out AJ's of the bittersweet just hours before I made the trip to pick up one measly bar. :)

Try 'em out. They are delicious!

PF Chang's Recap

Steve has been working so hard these past 18 weeks to train for the PF Chang's Rock'n'Roll Marathon that took place in Phoenix/Tempe on Sunday, January 18th. Steve finished his first ever full marathon (26.2 miles for those of you who don't know how long a full marathon is) in 4 hours and 27 minutes. I'm SO proud of him!! Below are some pictures from the days events.
We all took the new light rail from the end in Mesa to Tempe which was probably the smartest thing in the world for us to do. Traffic was mayhem and all of the pedestrians would have given me an anxiety attack. Above is Dylan with my mom and dad in a cute little shirt I made him the night before with Daddy's bib number on it. Below is the back of Dylan's little shirt. It's supposed to be like See Spot Run. Haha! I'm lame...

Cutest family ever right?! I have more chins than a Chinese phone book and Steve looks like he suffers from some sort of mental disorder and Dylan just looks confused...like always. :)
I have to give mad props to my little sis Valeri. Even though she wasn't using her high tech, expensive camera, she managed to capture the GREATEST fam photo ever. How adorable is that smile?!
Someone had a rough time being carted around and carried on Grandpa's shoulders. He needed some Cytomax to re-hydrate.
At Sluggo's afterward for a celebratory lunch with the family. I'm so incredibly proud of him. He's inspired me to start training to take on Detroit in October. Woo!
My boys, pooped from a long day. Steve's sunburnt face and forced smile and Dylan's "Mom! Put the dumb camera away!" look. Priceless.

Channel 914

Dear Cox Communications - Phoenix, AZ,

I greatly appreciate the selection of Music Choice channels in your expanded cable package. After a grueling 48 hours consisting of a mere 3 hours of slumber, a 12a-4a work shift, and an uncharacteristic, hyperactive 11-month-old who refused to take any sort of nap, cat or otherwise, I'm pleased to express my gratitude for the "Adult Alternative" channel, 914. My infant has surprisingly mellowed out, primarily due to the change in programming from Noggin to said Music Choice channel.

I'm eternally indebted to you for such a soothing channel for the listening pleasure of both Mommy and Baby. (No wonder I pay you upwards of $100/month for your services.) Not a penny wasted.

My deepest regards,
Jessi Sanfilippo

Surprise!!

I love looking through the camera and finding little treasures like this one from when I go out for dance, groceries, or random errands. According to Steve, Dylan just climbed inside the thing. :) Too cute!

Long Overdue

Here's my long overdue post recapping Christmas and the end of the year. Pictorially of course!

It's always fun on Christmas Eve (even during the day) to snuggle up on the sofa to watch Christmas classics while sipping a steaming hot mug of hot cocoa with whipped cream, red sugar sprinkled on top, and with some candy covered marshmallows; dipped by yours truly.
Christmas morning in Arizona wouldn't be complete without the "fireplace" a-roaring with the gifts waiting anxiously beneath the tree. :)

The Christmas Eve tradition we've decided to start is jammies. (Like most other families that is.) This year I decided I'd buy Dylan's jammies along with Steve's and then next year Steve will pick out the jammies Dylan opens on Christmas Eve before packing up in the car and driving around to see houses adorned with lights. This year was pathetic when it came to Christmas lights. We drove around for about 30 minutes or so without more than 5 houses having lights on them. It was sad. I later found out that same was the case most everywhere. :( My assumption is that no one can really afford the added expense on the power bill. Understandable.
Here's just a random pic of Steve and Dylan the other night before they went out. I don't even remember where they were going, but the fact that they both had their track jackets on and Dylan was being extra giggly that night, I figured it was a perfect photo op. :)

If you have a little munchkin who grows like a weed and are constantly in need of new clothes for him, check out Naartjie. It's one of the cutest little kid stores when it comes to clothes and they're very reasonably priced. They have sizes from preemie to toddler and the shirt above, rightfully referred to in our home as "The Hippie Shirt", was a treasure found during my outing to spend Christmas money on myself for just $3!! I can never resist buying things for Steve or Dylan even when I'm supposed to be out shopping for myself. I'm sure most mommies can agree that becomes the case once you become, well, a mommy.

Yes, yes, I know. I'm not the biggest fan (neither is Steve) of the lovely Chinese invention of the Croc. However, when your child is the size of a 12-month-old since the age of 7 months, his feet are rather "girthy" since he doesn't quite walk yet. Therefore, the need for Crocs becomes more and more apparent as you venture out into public with WTB (White Trash Baby) who has no socks or shoes on 99.99% of the time. I think that the only people they should make Crocs for are infants. Dylan's just too cute in them! Mad props go out to Uncle Eric & Aunt Val for gifting him these lime green ones as well as a flaming orange pair in the next size up. :)

I don't have any pictures of New Year's Eve because we didn't go out or anything. Dylan was asleep by 9pm, Steve by 11:30pm, and I was busy playing Solitaire on my IPod until the clock struck midnight at which point I paused my game, raised my right arm into the air, and stated aloud (to no one else but the stars of whatever Food Network show I was watching), "WooHoo! Happy New Year!" Afterwards, I quickly returned to my umpteenth game of Solitaire and fell asleep at approximately 12:24am.

I've gotta say that I'm pretty happy 2008 is over. It wasn't the best of years, we all know that much. However, it was nice to know that no one was alone in their struggles. Admittedly, the degree of struggle varied by family, but all in all everyone could empathize in some way with someone else whether they be a stranger or a familiar face. The resolution for this year was a mighty one. I've decided to take on running. Steve has such an admiration for the activity, that I decided to try it out for myself. See if I like it. One week into 2009 and I still haven't stepped foot in the gym to start training, but I'm safely living behind the excuse of not having the appropriate footwear. It's a valid excuse right?! I mean, running relies heavily, if not entirely, upon what adorn your feet. I'd like to know that after the completion of my workout, I'm not going to dread having a pulsating blister on the back of either heel. My goal is to get running shoes in about a week. I'll blog about it, naturally. I may even force Steve to take some pictures of my feet for the occasion. We'll just have to wait and see.

2009 has brought some unwelcome surprises. Two deaths within the first few days of the year. One in California and one all the way across the country in New York. So many medical issues became prevalent at the end of 2008, that I feel like I may still be in denial/shock at the recent family passings. They were both peaceful deaths and we're confident in our faiths to know that they are both in a better place, fulfilling a new destiny set forth by God. We'll all see each other again someday. May Arnie and Grandma Pat rest peacefully with our Lord.

Our lease is almost up, January 31st to be exact. It's 100% confirmed that due to last year's economic struggle, we're "forced" to stay out in Central Phoenix for another year. I say "forced" because it's a humbling experience to complain about having to stay in our current area. Selfishly speaking, it sucks to stay so far away from my side of the family. Gratefully speaking, between Steve and myself, we have 4 jobs! That's right, four. I am an overnight desk assistant for a dorm at ASU and do rebate processing and Steve has his weekday 9-5 and works his weekend show at the radio station. From an outsiders point of view, we're blessed. We feel the same. There are some who have 1 job for a family much larger than ours or have 0 jobs. We are VERY blessed. We also have a perfectly functional vehicle to transport us to our family that seems "so far away". After last year, a lot of people don't have that luxury. Another reason for wanting to relocate was to not just be closer to my family, but also to have a little more space. Luckily enough for us, we have the option of transferring within our current community to a 3 bedroom town home for a minimal rent increase. I'm trying my best not to get my hopes up too much, but we'll be meeting with the assistant manager tomorrow to tour a unit and discuss our options. The best we can do at this point is pray. I feel as though the opportunity to take advantage of this option is answer enough to our prayers. In a nutshell, we are blessed.

For the sake of continuing my scatter-brain of a post, Dylan's going to be ONE...in 4 weeks and 4 days. (Haha, I didn't even realize it, but that's funny since he was born at 4:44am in 4 weeks and 4 days from now. Weird!) Being the overachiever I am, I'm throwing him a giant city traffic party at my mom's on Sunday, February 8th (his birthday). We're lucky his actual birthday falls not only on a weekend day, but on a Sunday. That's the day when most all of our family is available. No work, just church and chores. Chores can undoubtedly be put off in order to celebrate our munchkin, agreed?? :) Keep your peepers glued for the cute invitations I'm crafting.

Alright, rant over. I'm getting back to watching Psych on USA and processing some rebates, both while working the night desk.

xo,
Jess

The Stills

Based on the album cover, you may be thinking that the music inscribed onto the disc is something along the lines of heavy, death metal. Alas, 'tis not. The Stills are AMAZING! I hear they've been around a while (according to Wikipedia that is), and I'm convinced that they are pure mellow musical genius. Check 'em out!
